fresh salmon like other fish if you want to make sure that it is fresh you must make sure that it is clear, bright eyes. Bright red or pink, clean gills, mild odor. Shiny, brightly colored skin with tightly adhering scales. Firm flesh, elastic to the touch, clinging tightly to the bones. and have no funny smiles

Q. How do i cook fresh salmon to use in a recipe instead of canned salmon?
i am making a recipe for a chowder that calls for canned salmon. i really don't care for canned salmon and want to use fresh salmon fillets instead. since canned salmon is already cooked, i am assuming it will be necessary to pre-cook the fresh salmon as well. what method should i use to cook the salmon to use in the recipe?


I would poach it in a cup of white wine, a cup of water and a tablespoon of chopped dill for about 5 to 10 minutes (depending on the size of the piece of fish). Let it cool and then flake it with a fork.

i love to eat salmon, but when i buy it, its tastes bad because it isnt fresh. i dont want to go fishing and get it that way. how can i make my salmon taste fresh and delicous?


if you are near the ocean.. buy from the fish markets at the wharf. otherwise.. try organic markets or a seafood retailer.. ask them to call you as soon as a shipment is availiable. cook your salmon same day. or freeze right away in small portions.. only do it in a plastic bag filled with water. this will prevent freezer burn and that "old" taste.

Q. How in advance can i buy fresh salmon to make sushi roll?
i am planning to cook asian roll with rice leaves around it. the filling is a fresh salmon mixture. how in advance can i buy the fish and prepare the rolls? can i prepare them a day in advance or only the same day i will be serving them?


no more than 1 day, and that's only if you buy sushi-grade slamon (just any raw salmon won't do for sushi) and store it on ice until used.

dont put any oil it has its own oil(omega3) but use some salt and that big pieces of pepper

i bought fresh salmon for the children & would like to pouch them, do i use a saucepan & milk? how long do you cook them for?


Yes, you can poach salmon in milk, Katie. Just enough to make sure the fish does not dry out or "catch", but generates enough steam to cook the fish. Pop a lid on and simmer on low to medium for around 10 to 15 minutes. I prefer to use my non-stick frying pan with glass lid. That way the fish fillets (or pieces) are in a single layer and I can see when they are "done". Traditionally "court bouillon" is used to poach salmon, not milk. You can also use a simple stock. Even a stock cube dissolved in water. It depends whether you want to use the cooking liquid to make a sauce...? If you are planning on doing that, obviously it depends which is preferable. Stock or milk? But IMHO it is by far better to microwave any fish inc. salmon... The kitchen will not smell so fishy then! Salmon being an oily fish, I like to sprinkle with/add seasoning and some thinly sliced veg like leeks or broccoli and simply zapp it in the microwave for 3 or 4 minutes. Tasty AND nutritious! Or if you have no micro and/or prefer, steam it. If you don`t have a steamer, you can wrap it in foil and put it into about half an inch of boiling water and steam it in a saucepan. That way you do not get so many "white bits" appearing on the fish... I know how children can be fussy about things like that! LOL! Whichever way you chose to cook salmon, it is cooked through when it has changed colour from "dark and wet" to "light coloured and flaky" That is when it divides into flakes easily. It should only take a few minutes (either steamed, grilled or whatever) and you just poke each piece with a fork or knife tip between the flakes to check. But take into account, the thicker the pieces, the longer it takes to cook. ENJOY!

Q. Does canned salmon have most of the same benefits as fresh salmon?
i love salmon, but it's not usually inexpensive. i am trying to eat healthy on a budget, so i was wondering if the canned variety has the same vitamins, omega-3, etc...as fresh or frozen salmon, although it sure doesn't taste the same!


Any processed food will be somewhat lacking when compared to the fresh item.

i received 2 lbs of salmon free at giant when i filled a prescription. (wierd i know). i've never had fresh salmon in my life and want to make it as delicious as possible. can you give me a recipe with clear instructions? oh, and what do i serve it with?


That's fantastic! There are literally hundreds of different ways to cook this fish my dear. My favorite is to cover a baking pan with aluminum foil, heat my oven to 350, sprinkle some salt on it, and bake it until it flakes in the middle easily with a fork. This will give you the full flavor of the fish. Be sure to keep a close eye on your fish when you cook it. This fish will cook fast and an over cooked fish is dry. You can also wrap your fish in foil with some thinly sliced onion, butter, a bit of garlic and onion powder, and some thinly sliced lemon for a tastey recipe. Again with the 350, again with the close eye. Salmon goes real well with brown rice, fried rice, boxed rice mixes, noodles...anyting light and mild in flavor.

INGREDIENTS: 1/2 cup water 2 tablespoons lemon juice 1/8 teaspoon chicken bouillon granules 2 (4 ounce) fillets salmon 1 tablespoon butter 2 tablespoons capers ground black pepper to taste 1 tablespoon chopped fresh parsley DIRECTIONS: 1. Bring water and lemon juice to a boil in medium-sized skillet. Stir in chicken bouillon granules. Reduce heat to a simmer and place salmon fillets in pan. Cover and simmer over low heat, 10 minutes per inch of thickness, measured at thickest part; or until fish flakes when tested with a fork. Remove salmon from pan; keep salmon warm. 2. Q. Where in chicago can i buy fresh wild salmon at the best price?
i love fresh salmon, but here in chicago, if the price is good the quality is poor, or, if the quality is good, the prices are steep. yep - i know, you "get what you pay for", and i am willing to pay the price if that's what's necessary. still, i dream of finding a store in the chicago (north side & north/northwest suburbs) area that sells excellent fresh wild salmon, and at an awesome, value price. does such a place exist??? thanks, from a hungry norwegian....


Unfortunately, the only places in the Chicago area we've been able to find excellent wild salmon are at (1) Whole Foods, and (2) Burhop's in Wilmette and Glenview. In neither place, however, is wild salmon to be found at "an awesome, value price," though--like you--we certainly wish it were so.
