| | | Earlean | Q. Can you sushi salmon bought at store?
"I can sushi the salmon which i bought from..."
yes of course, i can sushi the salmon which i bought from store if it is good freezing and fresh, because sushi grade salmon means that the salmon has been frozen under a formula by the FDA. Most fish is required by law to be frozen to be served as sushi in the US. salmon such as other fish must be transfer from where they fished it to other towns so freezing is the only option to save the salmon fish.
| | | Adam | Q. Can i use store bought salmon for sushi?
"Yes you can buy salmon from grocery stores and use it to make sushi..."
Yes you can buy salmon from grocery stores and use it to make sushi. Just make sure that you buy the fresh salmon, which you can freeze to make sushi later on as well. To see if a fish is fresh, check the smell of the fish, it should be salty not a bad smell and the eyes of the fish should be very clear, not cloudy. The scales of the fish should be whole and smooth. If they are then the fish you are buying is fresh and you can make sushi with it. Sam Winterberg

 Q. 'reputable' fish monger sold me some nasty ass fish. should i flip the hell out? i live right on the coast where any restaurant you go to serves amazingly fresh and delicious seafood. so you would think that it would be easy to find quality fresh fish in the local fish market right?
i have just moved to a new town (also a beach town) and was in need of some quality sushi grade fish yesterday. i was having a dinner for 11 people and it was supposed to be traditional/delicious.
however, my car was in the shop and my hubby who happens to have anosmia ( a condition where you are completely 'smell bind'. poor guy never smelled a thing in his life) was the one to pick it up after work. so i asked him to pick up 2 lbs of tuna, 2 lb of salmon, 1 lb of the best whitefish avail, and 2 lb shrimp.
i asked around, looked up reviews, and it said they were a great market. i called them before my husband showed up and told them exactly what i needed, and that it needed to be sushi grade becuase it was being served raw. he told me he had great sushi grade fish, and he would have it ready for my hubby to pick up.
ok...first of all. he sold my husband cooked and seasoned u-peel shrimp
he sold me some bony tilapia with dried yellow edges. i have bought much better frozen.
the salmon was soooo sticky and oily you could actually wipe the grime off of it with a towel.
the tuna (by far the worst) smelled like canned tuna. a smell i have never smelled on a 'fresh' fish before. you could touch it would your finger and make a hole in it. when you picked it up by one end it stretched and flaked. you couldnt even cut it w/o it falling apart.
i called.... flipped the hell out. what did you sell to my husband? he tells me....'well people buy it for sushi all the time'. we have never had anyone get sick or complain. i asked where the fish came from-who sold it to him? he said 'he didnt know- but it comes frozen and the box says sushi grade' i told him to get the box and give me the name of the company.
so he put me on hold and then claimed that the trash guy already took the boxes.
this fish wasnt even suitable to be consumed cooked. and 85 dollars later... id like my money back and an apology.
can i report this? how do i go about something like this? it cant be safe right? i have bought better looking fish frozen in a bag. he obviously thawed it incorrectly and wasn't storing it right.
so i had to run to the local supermarket and buy shrimp crab and clams. we ended up eating 'cooked' and veggie sushi... i was so pissed after making the rice and pickling ginger. what the hell is wrong with people.
I really don't think there is anything you can do except complain to the company that YOU purchased the fish from, not the company THEY purchased the fish from. You said the company you worked with thawed & stored the fish incorrectly, what does that have to do with the company that they purchased the fish from? Nothing.
Either way, the only thing you're going to get is an apology & POSSIBLY your money back depending on whether or not they want your business. Companies know that people talk & when one person has a bad experience, they WILL undoubtedly tell their friends.
Call the company & CALMLY ask for the manager. Then CALMLY explain the situation & ask them what they're going to do to fix the situation. Don't 'flip the hell out'. That will only hurt the situation.
Good luck.
